Healthy can mean a million things and when I originally decided to put together this round-up of healthy recipes, I realized I would need to be a bit more specific. So I decided to set the boundaries based on what is healthy for my body as a Type 1 Diabetic and that means low-carbohydrate recipes sweetened with more natural ingredients, if they are sweetened at all. My body does not produce insulin, which regulates blood sugar levels, so in my daily life, I generally eat low in carbohydrates to stay healthy. Sure, I definitely indulge sometimes but especially around the holidays, it’s important to gain as much control as I can over my sugar and that begins with the recipes I put on the table.
