I can’t believe 2015 is almost over!!! I am so ready for 2016 and even though I don’t usually make a list of New Year’s resolutions, I feel like maybe I should this year because I have so many incredible things going on. So let’s do this…
-blog every single week and bake a lot more (you should see my baking ‘to do’ list)
-continue losing weight with take shape for life and be the most amazing coach I can be
-eat more chocolate and not feel bad about it
-finally create my photography portfolio on kitchen tested so I can acquire my clients
-make doctor appointments when I say I’m going to
-use up the spices in my spice cabinet because I have too many to count
-do construction on the house and make a much bigger kitchen (this one better happen!)
-plan more kosher food blogger events
Okay, now that I have a list and I’ve posted it for all of you to see and judge, I have to do everything on there, right??? Let’s see your New Year’s resolutions! And now before looking forward, I wanted to write this post to actually look BACK on some of my favorite recipes from 2015. It was really hard to choose because I had such a creative and fulfilling year but in the end, the 8 recipes below stuck out from the rest.
8. CHOCOLATE COVERED FIG ICE CREAM
I love this because it is one of the best ice cream recipes I’ve made on Kitchen Tested. I was trying to stuff figs with chocolate but in the end, they seriously didn’t work out but what did come from it was frozen chocolate covered figs and I couldn’t stop eating them! And the ice cream base is so silky and rich! I wish I had some in my freezer right now…
7. BLACK AND WHITE COOKIE HAMANTASCHEN
I made a lot of hamantaschen this year for Purim but these were definitely my favorite. The filling is a cookie butter made from black and white cookies and the toppings are classic chocolate and vanilla icings. Every bite is like a black and white cookie on speed!
6. PEANUT BUTTER AND APPLE PANCAKES
I had an amazing opportunity to work with the Costco Diabetes Magazine for this recipe and as a Type 1 Diabetic myself, it was such an honor. These pancakes are made with all-natural ingredients and they are so delicious and healthy. I’ve made tons of pancakes on my blog and this is definitely one of my favorites.
What can I even say about this recipe?? I first need to mention the lighting in this photo (and all of the photos in the post) because I baked these in my parents kitchen in Seattle and I need to bring that lighting back to my house in Long Island! And then there is alllll that kishka stuffed inside of homemade challah dough with a crunchy and salty hot dog. Everything is just right about this.
4. CRANBERRY CHOCOLATE CHIP COOKIE COBBLER
Yup, I put a raw chocolate chip cookie on a fruit cobbler and baked it. You’re welcome! You can use any fruit filling for this and really, any cookie recipe you want. Mix and match to your hearts desire. I would like to try a pear cobbler with gingerbread topping next time. Or maybe strawberries and rhubarb with a triple chocolate cookie.
The flavor combination in this recipe is an explosion on your taste buds! The brightness of the citrus, earthiness from the sage, richness from the olive oil…it all just works. This is also one of my favorite posts of 2015 because I am obsessed with these pictures. We eat with our eyes first, right???
Inspired by the apple roses racing around the internet, I thought it would be fun to try out the same method with potatoes and this recipe was a hit! The density of these roses reminds me of a potato knish but with loads more flavor and texture and your guests will be shocked when you serve them something so beautiful. They won’t even know where to begin!
1. …and my most popular post of 2015 is actually my last recipe of the year! Crazy, right?!? Say hello to my {ZUCCHINIOLI} ZUCCHINI RAVIOLI WITH SPINACH RICOTTA FILLING
I can’t believe how many people have been posting their pictures of this recipe all over social media and they all look incredible! I made these gluten free ravioli for dinner one night and posted to Instagram and I got so many requests for the recipe that I remade it the next day with nicer pictures for my blog. I never thought it would get shared as much as it has been and I encourage everyone to make it for dinner tonight because it is really as good as it looks!
I hope you all make resolutions that you can keep and that one of your goals is to try something new in the kitchen!
HAPPY NEW YEAR!!!
