We always have tons of snack around the house over Passover. Most of them are not even close to healthy and for some reason, my diet goes out the window and I eat everything in sight. That includes chips, chocolate, fruit roll-ups, lollipops and chocolate covered marshmallows. So instead of eating all of those snacks separately, I figured I could just smash some of them together and then I could eat them all at once. Yum! The very large overweight person inside of me is screaming for joy.
Chocolate Marshmallow Crunch Log
6-8 oz. milk and dark chocolate
1 (5 oz) back mini marshmallows, any flavor
1 cup toasted or roasted nuts (I used Guiltless Gourmet Crunchies Roasted Cashew Crunch)
*you can add anything else you want from your pantry for this log, as long as you think it will taste good. I didn’t think the fruit roll-ups would be any good in this recipe 🙂
I broke up a mix of milk and dark chcolate but you can use any kind you have lying around. I melted the chocolate in the microwave for 30 seconds, mixed and repeated the process two more times until the chocolate was fully melted. Once you take the chocolate out of the microwave for the third time, it won’t seem totally melted but give it a good stir and everything will melt together smoothly.
 I added the marshmallows and stirred. I then crushed up the bag of roasted cashew crunch and added around 1/4 cup right in to the mixture.
I layed out a large piece of plastic wrap and sprinkled half of the remaining nuts horizontaly, in a log shape. I covered the nuts with the marshmallow mixture then sprinkled the rest of the nuts on top. I kept a few extra marshmallows just to snack on. Delicious!
 I wrapped the chocolate marshmallow log in the plastic wrap and squeezed with my hands to form the log and tighten it as much as possible.
I placed the log in the fridge for 1-2 hours to set then took it out to slice.
Using a sharp knife, I sliced the chocolate log in to thin slices then placed them in the freezer. And that’s it! All you have to do is open the freezer and snack.
