I am addicted to Pinterest! Anyone who is a member of this fantastic website for organizing the things you find on the web probably knows why. Every time I find a recipe that I love, I just ‘Pin It’ and it automatically saves on my Pinterest page. I can browse other people’s pinboards and even repin their favorite new things. Every day that I browse Pinterest, I get inspired by other people’s interests and on one eventful day, I found a fun idea that I had never thought of doing…adding cake batter to rice krispie treats! My mom used to make rice krispie treats every Shabbos and she always let me lick the spoon. Yum. I repined the recipe from unique food blog, Gimme Some Oven, and started brainstorming how to take the concept to the next level. I actually let my trip to the grocery store do the thinking for me and when I saw a box of Devil’s Food cake mix on the store shelf, I had my answer! Chocolate, chocolate, and more chocolate!
Devil’s Food Krispie Treat Lollipop Ingredients
makes around 50 lollipops, but you save some of the Cocoa Krispie treats for snacking
2 Tbsp margarine
1 (8-10 oz) bag of mini-marshmallows
1/2 cup Devil’s Food dry cake mix (not prepared as batter)
6 cups Cocoa Krispie’s (or another chocolate rice cereal)
2 Tbsp Turtle Crunch Sprinkles (or regular chocolate sprinkles) + extra for coating
1 cup dark chocolate
2 tsp vegetable shortening
lollipop sticks
sprinkles for coating
I melted the margarine in a large saucepan over low heat then added the marshmallows. I stirred until beginning to melt then added the dry cake mix one spoonful at a time until combined. I stirred in the chocolate cereal until coated then added the sprinkles and mixed. I chose to use Turtle Crunch sprinkles for added flavor and texture. I pressed the Cocoa Krispie mixture into a greased baking dish and let cool for 30 minutes.Once the Cocoa Krispie treats were cooled, I just pulled pieces off with my hands and rolled in to balls. Each ball was a little bit less than a tablespoon but you can do whatever size you want. I placed the balls on parchment paper and put them aside to set for a few minutes.In the meantime, I melted the chocolate for dipping the pops. In a microwave safe bowl, I added the chocolate and vegetable shortening and heated in the microwave for 30 seconds. I stirred the mixture then placed back in the microwave for another 30 seconds. I stirred again and heated one more time for 30 seconds. The chocolate was perfectly melted and shiny. You can also melt your chocolate in a double-boiler but I find that the microwave does a great job. I dipped the tip of a lollipop stick in the chocolate then carefully set in a Cocoa Krispie ball and set back on the parchment paper. I repeated this process for all of the balls and let the chocolate set for a few minutes. By doing this, the sticks should set in the center and not fall out of the lollipops while dipping in the remaining chocolate. Then came my favorite part! The dipping. I dipped each lollipop in to the silky dark chocolate then let the excess chocolate drip off before dipping in the sprinkles. If your chocolate in the bowl begins to set, just place in the microwave for 30 seconds and stir. I dipped the chocolate coated lollipops directly in a bowl of sprinkles and set on the parchment paper to cool. Once the chocolate was set, the lollipops were ready to eat! I was already full from snacking on the Cocoa Krispie treats while making the balls but there’s always room for more dessert! The Devil’s Food cake mix added some serious chocolatey flavor to the crunchy Cocoa Krispie treats. You just can’t get that flavor without adding cake mix. Who knew?!? I’m thinking of trying this recipe again with Rice Krispies and Red Velvet cake mix. The turtle crunch sprinkles added even more crunch and the luscious chocolate was the perfect silky texture contrast. You can even add any sprinkles you want to decorate the lollipops. So many options! The fun part is going to be serving them my guests who are going to think I’m giving them cake pops. Boy will they be in for a crunchy surprise!
