I am over the moon about today’s guest post while my house is under construction! Sara can tell you more below but we’ve been blogging side by side for over five years ago and have supported each other since the beginning! It’s been so incredible following Sara’s growth on her blog, My Imperfect Kitchen, and now she even hosts a podcasts called Food Blog Radio. How cool is that?!?!? Sara’s philosophy is “Life isn’t perfect, but it should always be delicious!†and I think we should all adopt that state of mind…starting with these coconut fudge popsicles.
Sara here from, My Imperfect Kitchen. I’m so excited to be guest posting for Melinda today! Did you know, the first blog I ever did a guest post for was Kitchen Tested? It’s true! That was almost five years ago and I consider myself blessed to still be blogging and to have had the privilege of watching both Melinda and Kitchen Tested thrive and flourish since those early years too! I’ve also had the pleasure (?) of remodeling my entire kitchen and living with a refrigerator in the garage and eating whatever we could BBQ or cook on a camp stove. Remodels can be stressful, but speaking from experience, I know it will all be worth it in the end! Hang in there, Melinda! You can do this!
Today I made a simple blender Coconut Fudge Popsicle recipe using only four ingredients and a lot of love! Blender recipes are perfect for a lot of things, but especially easy when you’re looking for something simple to make that doesn’t require a lot of dishes. That’s essential when you’re re-doing your kitchen and have limited space to wash dishes! Everything goes together quickly and another bonus, they’re healthy and you get chocolate!
These remind me of the fudge popsicles we used to eat as kids. Using the Coconut milk gives them a distinct tropical taste and if you don’t like coconut, feel free to use regular milk!

Ingredients
- 13.5 oz can Coconut Milk
- 1/4 cup Cocoa Powder (unsweetened)
- 3 Tablespoons honey
- 1/4 cup plain non-fat yogurt
Instructions
- Place everything in the pitcher of your blender and process on high until smooth, about two minutes.
- Pour into your favorite popsicle molds and freeze for at least six hours or overnight.
- When you are ready to eat, dip molds in warm water to help release them and enjoy!
