So this recipe actually has a great story behind it and I think you’re gonna like it. I admittedly watch a TON of TV and one of my favorite shows is Cooking Channel’s Unique Sweets. I even have some favorite episodes that I’ve seen quite a few times and I will still watch them over and over as if they were new. One of those episodes is called ‘Seattle Sweets’ (of course) and during that delicious episode, they rave about a chocolate shop called Fran’s Chocolates. Even though I grew up in Seattle and Fran’s Chocolates has been around since 1982, I’ve never visited Fran’s since those delectable treats are sadly not kosher. But watching that Unique Sweets episode so many times and watching them fill Calimyrna figs with ganache then dip them in semisweet chocolate got me thinking that it was time I made my own.  Such a simple genius concept with so much flavor!
Okay, so then I decided to make my own chocolate filled/chocolate dipped figs but I thought I would be cool by adding some chopped dried cherries to the ganache but really, have you ever tried piping a ganache where pieces get stuck in the piping tip? Yeah, adding dried cherries was a bad idea! But what came from it was even better…this ice cream!! Instead of filling the mildly sweet figs with ganache, I poured melted chocolate all over them to create delicious chocolate covered fig bites of heaven. Then I dropped those treats right into a batch of vegan ice cream as it was churning and bam, a new sweet treat was born.
Since the only dairy free chocolate I use in my kitchen is California Gourmet, I reached out to them for this recipe to make sure it would be okay to rave about them in this blog post. I seriously love anything covered in chocolate. I know some people say they would eat a shoe if it was covered in chocolate and I’m not sure I would do that…but most other things, right?!? I love that these chocolate covered fig bites are chewy on the inside (even frozen) and have a bit of crunch from the hardened chocolate on the outside. I seriously can’t get enough!
OH MY is right!! Just dig right in.
I even sprinkled more Calimyrna figs right on top of the ice cream! Chewy figs, cold creamy ice cream, crunchy frozen chocolate. Good lord!
