Let me just start by saying that I know this is by no means an original idea and I certainly don’t want to take credit for it. In fact, I’ve been drooling over Martha Stewart’s Matzo S’mores recipe for years. But what IS special about this recipe is that it’s a Strauss family tradition to make matzo s’mores every Passover thanks to Uncle Jason (my brother-in-law) and his barbecuing talents and I seriously look forward to it every year. I’ve been eating s’mores since I was a little kid and I would even make them in the microwave just to get my intensely sweet fix of this camp fire treat. So when Jason started making non-dairy s’mores with matzo, bittersweet dark chocolate and marshmallows on the grill after eating a massive lunch of barbecued steaks, chicken, sausages and whatever else we could get our hands on, I was like a pig in…well, you know. Unlike a traditional s’more with a sweet and spicy graham cracker, matzo is salty and lends itself well to the super sweet chocolate and toasty marshmallows that melt inside of it’s crunchy shell. So every year, that’s what Uncle Jason makes for us and we devour it all up!
But this year, I decided not to eat regular matzo in favor of the gluten free alternative and that meant a different type of s’more and a really big box of gluten free matzo crackers all to myself. If you think regular matzo is salty, try taking a bite of gluten free matzo! It’s really more of a cracker than actual matzo and you can’t make the traditional blessing on it that you would on matzo or challah but it’s a great alternative for snacking and won’t stuff up your belly for weeks on end. So combine this salty extra crunchy gluten free matzo with the melted chocolate and fluffy toasted marshmallows and we have a home run!
Now that Passover is over, I’m left with a big box of gluten free matzo crackers (I only ate a few sheets during the holiday) and all I really want to make with them is more s’mores! I seriously can’t think of any other way that I would rather eat these salty crackers then with loads of melted chocolate and marshmallows.
Gluten Free Matzo S’mores
makes 4 servingsÂ
2 sheets gluten free matzo crackers (you can even make your own)
2-3 large marshmallows, chopped
1/4 cup chocolate chips
I preheated the oven to 375 degrees F. and lined a baking sheet with foil. I sprinkled one sheet of the gluten free matzo with the marshmallows and chocolate chips and placed it on the baking sheet.
A delicious sea of sweetness!
I topped the chocolate chips and marshmallows with the second sheet of gluten free matzo then wrapped the entire thing in the foil. I baked the matzo s’more for 10 minutes. While the large s’more was baking, I toasted up a few extra marshmallows with my kitchen torch to snack on. If I closed my eyes, I could imagine myself sitting by the campfire…with no bugs in sight! I removed the s’more from the oven and carefully unwrapped it. With a large knife, I sliced the s’more into four pieces.
I let the s’mores cool slightly since they were very very hot coming out of the oven.
