It’s party time in my house! Well, really, the kids are finally back in school after way too many snow days and the Kosher Connection Link-Up this month is just begging for a fresh new cocktail. Okay, fine, I drank one of these Cherry Tequila Sours while my kids were home but I started getting a little tipsy so I had to stop drinking. Didn’t really want to get drunk while hanging out with my kids. Listen, it works for some parents but I don’t really drink too often so even just a few sips and I was ready to take a nap. So now it’s time to celebrate and take more than a few sips of this delicious sweet and tangy tequila cocktail with a splash of fresh lime. Hello! My mouth is watering just thinking about this drink. Cherry Tequila Sour
makes 2 drinks
1/2 cup tequila
2 Tbsp sour cherry syrup (recipe below)
2 tsp fresh lime juice
1 cup seltzer water
2 lime wedges, optional garnish
4-6 frozen pitted cherries, optional garnish
Sour Cherry Syrup
makes 1/2 cup of syrup
1 16-oz can pitted sour cherries, in water
1/2 cup coconut sugar (or white sugar)
1 Tbsp lime zest
I began with the syrup, which needed some time to cool before making the drink. In a medium pot, I combined the canned sour cherries, coconut sugar and lime zest. You can use white sugar for this as well.
I brought the sour cherry mixture to a boil over medium heat then lowered the heat and simmered the cherries uncovered for 45 minutes, stirring occasionally. I strained the cherries through a fine mesh sieve and pressed on the cooked cherries to get all of the juice out of them. I discarded the smashed cherries.
And that’s it! I refrigerated the syrup for 1 hour, until cold. I love the beautiful rich color of this syrup! You can even pour it over ice cream.
While the syrup was chilling, I made the seltzer water using my brand spanking new Cuisinart Metallic Red Sparkling Beverage Maker. Man, I love this thing! So cool that one of you is going to win your own in the contest at the bottom of this post.
When the sour cherry syrup was cold, I began preparing the drink for two. I poured a quarter cup of tequila in to each cup then topped with one tablespoon of syrup and one teaspoon of fresh lime juice each. I poured around a half a cup of seltzer water in to each cup and the drinks were ready.
I placed a lime wedge on the edge of each glass, dropped a few frozen cherries in to each cup then drank it up.
The cherry syrup can be refrigerated for up to one week, which is great for lots of Cherry Tequila Sours!
