When I was a kid, I used to love going to the mall with mom for only one reason…Orange Julius! A frothy mixture of orange juice concentrate, milk, sugar and vanilla blended to perfection. They have tons of flavors that I enjoy, including Strawberry and OrangeBerry, but the original Orange is still the best and I crave it all the time. So with tons of oranges piling up in my fridge (I don’t know why I keep buying them when I don’t really eat oranges), I decided it was time to make an ice cream base that would emulate the sweet citrus flavor of an Orange Julius. Since I’m always challenging myself to try new ice cream methods, I thought I might try a no-cook/egg-fre/dairy free recipe that would still be creamy and delicious. I think I’ve done it with this combination of ingredients! The coconut milk and ripe banana give the ice cream a silky texture while the crushed macadamia nuts add some crunchy texture. I love some crunch in my ice cream. I know macadamia nuts are not part of an Orange Julius but you know I had to add a little something extra in to the mix. The fresh oranges and zest add a pop of citrus that reminds me of my childhood. Yum!
Orange Julius Ice Cream
3/4 cup coconut milk
1/2 cup orange juice
1 ripe banana
2 Tbsp honey
1 Tbsp orange zest
1 tsp vanilla extract
1/4 cup crushed macadamia nuts
I chose to use fresh oranges for this recipe since I had them in the fridge. So much flavor and you gotta love that color!
I placed all of the ingredients, except for the macadamia nuts, in the food processor and blended until smooth.
I poured the custard in to my ice cream maker and churned it for ten minutes. At the ten minute mark, I added the crushed macadamia nuts and churned the ice cream for another two minutes.
I scooped the soft ice cream in to a loaf pan and froze it for at least 4 hours. I scooped the hard ice cream in to a bowl, topped with more crush macadamia nuts and ate it all up!
I even let some of the ice cream melt in the bottom so I could drink it like a real Orange Julius.
