When I was a kid, I drank Odwalla orange juice every single day. I loved the fresh, pulpy tang of a cold glass of juice and I looked forward to it as a part of my morning breakfast. When I was diagnosed with type 1 diabetes at age 18 (yup, I was a freshman in college), juice was no long in my vocabulary unless my sugar was low and I needed a quick pick-me-up. Well, after over 10 years with this disease, I’m learning that there are ways to have my oranges and drink them too. I know I shouldn’t drink juice every day but once in a while, a healthy glass of this Sunshine Juice isn’t so bad. With the help of my friends Chaia and Eliahu from Fruit Platters & More and their fancy juicer, I had so much fun making my very first homemade juice concoction. Doesn’t the golden color of this homemade juice remind you of the bright sun on a perfect warm spring day?!? Wow, I think I’m becoming a health nut! Sunshine Juice
1 Gala apple
1 Bartlett pear
1 large orange
1 large golden beet
2 whole carrots
1/2 piece fresh ginger
Not much to prepare for this dish. I washed the apple, pear, beet, carrots and ginger, all unpeeled. I cut them up into pieces that would fit in the juicer. I peeled the orange since I was told that citrus peel should not go in the juicer. Good advice!
One fruit at a time, Eliahu pushed the fruits and vegetables through the juicer. I loved watching the colors change as the juices combined in the bowl.
It really doesn’t get any fresher than this!
