It’s not often I see star fruit in my local grocery store but on a recent shopping trip to restock my fridge after 2 weeks on vacation, there they were in all that yellow star-shaped glory! I know I say this all the time but how could I NOT buy them?!? Right when I saw the star fruit, I planned in my mind to make a sorbet. But by the time I got home, Â the plan changed to a milk-based version instead, called Sherbet. When was the last time you had sherbet? I can’t even remember! I certainly drank my fair share of Orange Julius drinks when I was a kid and this sherbet actually reminds me a lot of that frothy orange smoothie.
Star Fruit Sherbet
makes 2 cups sherbetÂ
4 star fruits
1/2 cup sugar
1 cup whole milk
1/2 Tbsp orange zest
1/2 tsp vanilla
I sliced the star fruit in to large pieces, placed in a food processor and pureed the fruit.
I strained the fruit to get all of the juice of the star fruit without all of that peel and any large chunks. I used a spoon to push the fruit through the strainer to get all of the juice out. Don’t want to miss out on any of that precious fruit juice!
I whisked in the sugar, zest and vanilla extract. I added the milk, whisked then placed the custard in the fridge for 1 hour.
I then poured the custard in to my ice cream maker and it only 5 minutes, the sherbet was ready! Your ice cream maker might take longer so just keep an eye on your custard.
At this point, you can just chow down on the sherbet or you can place it in the freezer to harden even more. The star fruit sherbet has a mild sweet flavor, almost like a mix between an apple, pear and plum, and the orange zest adds some zing to this creamy sweet dessert. You can really use any fruit juice you want to make this sherbet and you can interchange the orange zest with lemon or lime zest as well. So many options…guess I’m gonna have to make them all!
