In an effort to cool down in this insane August heat in New York, I’ve been clamoring for smoothies, iced coffee and lots of Crystal Light lemonade. I also eat more watermelon than you can even imagine. I can finish one of those massive Costco watermelons in 2-3 days…on my own! My other new summer obsession? Pinot Grigio. No, I am not a Real Housewive of New York and no, I will not be bringing my own bottles of pinot grigio to other people’s parties (you all know who I’m talking about). But it has definitely become my wine of choice. So with an open bottle of pinot grigio teasing me on my kitchen counter and a plethora of fruit option overflowing my fridge, I came up with the perfect way to beat the summer heat AND get a nice buzz in the middle of the afternoon. You can use any fruits you want in this smoothie and hey, if you like a chardonnay or sweet bubbly white wine, just use that instead! Just make sure it tastes good.
Raspberry-Peach Pinot Grigio Smoothie
make 4-6 servings
2 overripe bananas
2 peaches, roughly chopped
1 cup fresh raspberries
1 bag (16 oz) frozen mixed berries: cherries, blackberries and raspberries
2 cups pinot grigio
It doesn’t get any more simple than this! And without any yogurt or milk, this is actually a very healthy smoothie. I just placed the bananas, peaches, frozen berries and pinot grigio in a blender. PS. I’ve had this trusty blender since college!
I blended until all of the ingredients were smooth. Don’t forget to taste the smoothie and if you think it needs more wine, more bananas, more of anything…just add and puree until smooth.
It’s just that easy. You are ready to drink! The overripe bananas add a layer of creaminess to the smoothie without adding yogurt; the frozen berries are the perfect sweet substitute to using flavorless ice; the peaches and raspberries are in season and bursting with flavor; and the wine, well, it’s just delicious! A nice little buzz at 3 in the afternoon while testing this recipe never hurt anyone, right?!?
