When I say these are the BEST Passover chocolate chip cookies, I mean it! And they freeze so well so when you make 4 dozen, you can freeze them to have through the entire holiday.

Ingredients
3/4 cup oil (or room temp margarine)
3/4 cup brown sugar
1/2 cup sugar
1 tsp baking soda
1 tsp vanilla extract
1 egg
1 egg yolk
2 cups grain free flour blend (or almond flour + 1 Tbsp tapioca flour/starch)*if you don’t have tapioca, you can leave it out but the cookies won’t be as chewy
1/4 tsp salt
1/2 cup chocolate chips + some finely chopped chocolate
Instructions
In a mixing bowl, blend together the oil, brown sugar, and white sugar. Add the baking soda, vanilla, egg, and yolk. Add the flour blend and salt, and mix until a dough is formed. Stir in the chocolate chips and chopped chocolate.
Using 1/2 Tbsp measuring spoon, scoop out the dough onto a parchment lined baking sheet. The cookies spread a lot while they bake so I don’t recommend using a larger scoop…unless you want huge cookies!
350°f for 10 min. Cookies will continue to cook once they are out of the oven so don’t bake for longer than 10 minutes.
