Zebra Blue and Yellow Cornbread

Ingredients
Yellow Cornbread Batter:
1 cup coarse-grind yellow cornmeal
2 tbsp sugar
1/2 tsp kosher salt
1/4 tsp baking powder
1/4 tsp baking soda
1/2 of 1 egg (whisk egg separately then use half in this batter)
3/4 cup buttermilk (can be made dairy free with almond/soy milk + 1 tbsp lemon juice)
Blue Cornbread Batter:
1 cup coarse-grind blue cornmeal
2 tbsp sugar
1/2 tsp kosher salt
1/4 tsp baking powder
1/4 tsp baking soda
1/2 of 1 egg (whisk egg separately then use half in this batter)
3/4 cup buttermilk (can be made dairy free with almond/soy milk + 1 tbsp lemon juice)
+1 Tbsp neutral oil
Instructions
Preheat oven to 450 degrees f. and place a cast iron skillet in oven while preparing batters.
In separate bowls, whisk all ingredients for yellow batter and blue batter.
Remove the cast iron skillet from the oven and add the oil.
Add 1/4 cup of the yellow batter in the center of the skillet. Then add 1/4 cup of the blue batter to the center, which will push out the yellow batter. Repeat this process back and forth between the yellow and blue batters until you've finished and the skillet looks like a zebra. The more stripes you want to have, the less batter you want to add as you alternate. You can also use a toothpick to create a swirl effect.
Return the skillet to the oven and bake 15-20 minutes, until the center is firm. Best served warm.
