I have to start out by giving full credit to Michelle Tam from Nom Nom Paleo for this incredible idea! There are seriously no words to describe how amazing this recipe is. It’s breakfast, lunch AND dinner! You’ll notice that my sandwich looks very different from Michelle’s and that’s because I went with a completely different method to make my eggs…basically because my cookie cutters were in the dishwasher and I was too lazy to wash them. And, well, my method is definitely much faster and uses less dishes. But let’s be honest, her version is so much prettier. Before you get started cooking, make sure you have all of the ingredients ready because you can literally make this breakfast in the time it takes to cook the patty (10 minutes, to be exact).
Breadless Sausage & Egg Sandwich
makes 1 sandwich
1 tsp extra virgin olive oil
2 eggs
1 sausage patty
1 small handful fresh spinach leaves
garlic powder
salt and pepper
3-4 slices lamb bacon (or any bacon you want), optional
1/2 avocado, optional
The best way to eat this sandwich is hot and the great thing is that everything basically cooks at the same time. I started by cooking the sausage patty on the stove. I used a Jack’s Gourmet Kosher Facon Burger but you can use whatever patty you want. Michelle from Nom Nom Paleo even makes her own sausage patty! I placed the burger in a pan heated with olive oil then cooked for 5 minutes on each side, until cooked through and crunchy on the outside. While the burger cooked, I prepared the lamb bacon, guacamole and egg buns.
Crunchy Lamb Bacon: I lined a baking sheet with foil, placed the bacon on the pan and cooked for 10 minutes at 400 degrees F.
Easy Guacamole: I smashed the avocado with a fork, added some garlic powder, salt and pepper and stirred to combine.
Egg Buns: This is my favorite part because it’s just so easy. I whisked the eggs together with garlic powder, salt and pepper and separated the mixture between two flat-bottom bowls. I ripped the spinach in to small pieces and sprinkled it over the eggs.
I microwaved each bowl separately for 1 minute then set them aside to cool slightly. If you want the egg buns to be prettier, you can cut off the edges with a round cookie cutter but I left mine in tact. Then everything was ready for the sandwich!
Assembly time! I placed one of the egg buns on the plate, topped it with the burger then creamy guacamole and crunchy lamb bacon.
I topped the sandwich with the second egg bun and voila! A breadless sandwich to go crazy for.
