Well, it’s no secret that I love lamb bacon. In fact, I even created a category for Kosher Bacon on Kitchen Tested because I have so many recipes using this wondrous ingredient. I’m even in conversation with an incredible new company making kosher lamb bacon and you’ll be hearing more about them soon enough. BIG things coming! But right now, it’s time to talk about the Wandering Que. If you follow me on social media, you’ve probably already heard of the Wandering Que but I’m still going to rave about them here. Run by the incredible Ari White (he also runs a successful catering company called Gemstone Catering), the Wandering Que is a kosher Texas Smokehouse BBQ Pop-Up Restaurant that literally “wanders” the East Coast, sharing it’s smokey goodness with everyone that comes by for a taste. In fact, I just drove all the way to Riverdale (hey, that’s far from Long Island with traffic) to get some smoked ribs, turkey, brisket, sausages, corn bread and more! Ari was generous enough to share some of his incredible smoked lamb bacon with me and I knew just how to use it….by wrapping it around sweet dates! I’ve seen so many non-kosher blogs wrapping dates and figs with bacon and I’ve always wanted to know how it taste and now I got my chance. And you know what??? It’s seriously as good as people say! Wrapping sweet dates with salty lamb bacon is seriously a revelation. Such a simple process with HUGE flavor impact. Just try it for yourself. You’ll see!
Lamb Bacon Wrapped Dates
2 lbs. lamb bacon
15-20 fresh pitted dates
1/2 cup unsalted shelled pistachios
toothpicks
Should we all just drool for a second? Check out these plum fresh dates. Natures candy at it’s best. These are just screaming to be wrapped in lamb bacon!
I preheated the oven to 400 degrees F. and lined a baking sheet with parchment paper. I made a small slice in each date to remove the pit then filled them with 2-3 pistachios.
I wrapped each pistachio stuffed date with a piece of lamb bacon, secured each one with a toothpick and placed them on the baking sheet. You definitely want to use a toothpick because the lamb bacon will shrink as it cooks and it might separate from the date. You want that lamb bacon nice and secure.
I cooked the lamb bacon wrapped dates for 15-20 minutes, until the bacon was cooked and crunchy and the dates were plump.
I set the cooked dates aside to cool for a few minutes before popping one in my mouth. Trust me, if you eat one right out of the oven, you will definitely burn your mouth. Those dates get HOT!
I served the dates with some extra shelled pistachios, pretzels and beer. Staying classy at my house.
