Another great recipe inspired by my garden! My zucchini plant, which is practically taking over my garden, is finally growing beautiful green squash and I am jumping for joy. Since I really know nothing about gardening, I’ve been doing a lot of online research and I learned something very interesting about zucchini. The bigger they are, the thicker the skin gets and the flavor pretty much disappears. So when I forgot to check on my vegetables for a few days, the zucchinis just kept getting bigger and bigger and thicker and thicker! When I finally harvested them, those suckers were heavy and huge. So what better way to eat these homegrown zucchinis than in their natural raw form, right?!? I’ve seen many shaved squash recipes on the internet and I always wondered what this raw vegetable would taste like so I figured now was the perfect time to create my own salad with layers of flavor. Raw mild zucchini, sweet cherry tomatoes, salty crumbled feta and goat cheese, crunchy almonds, creamy hard-boiled egg yolks and bright fresh mint topped with a sweet and spicy honey-lemon dressing. Perfection!
Shaved Zucchini Salad
serves 2
2 large zucchini
1/2 cup cherry tomatoes, sliced in half
2 hardboiled eggs, peeled and chopped
2 Tbsp raw sliced almonds
2 Tbsp crumbled feta
2 Tbsp crumbled goat cheese
2 Tbsp fresh mint, thinly sliced
fresh cracked black pepper
Honey-Lemon Dressing
2 Tbsp olive oil
2 Tbsp fresh lemon juice
1 Tbsp honey
1/4 tsp dried chili flakes
I washed the zucchini and sliced them thinly with a vegetable peeler.
I placed the zucchini slices on two plates then scattered the plates with the sliced cherry tomatoes. I sprinkled on the crumbled feta and goat cheese, the chopped hard-boiled egg, the thinly sliced fresh mint and the raw sliced almonds. I sprinkled the salad with freshly cracked black pepper.
For the dressing, I mixed together the olive oil, fresh lemon juice, honey and chili flakes in a jar and shook the jar until the dressing thickened, around 30 seconds.
I lightly drizzled the dressing over the shaved zucchini salad and devoured! That’s all there is to it.
