The BEST Passover Chewy Chocolate Chip Cookies

🍪Recipe by Melinda Strauss makes 4 dozen cookies

3/4 cup neutral oil  3/4 cup light brown sugar 1/2 cup sugar 1 tsp vanilla extract 1 egg 1 egg yolk 2 cups grain free flour blend (or almond flour + 1 Tbsp tapioca flour/starch)*if you don’t have tapioca, you can leave it out but the cookies won’t be as chewy
1 tsp baking soda 1/4 tsp salt 1/2 cup chocolate chips + some finely chopped chocolate

In a mixing bowl, blend together the oil, brown sugar, and white sugar. Add the vanilla, egg, and yolk. Add the flour blend, baking soda, and salt, and mix until a dough is formed. Stir in the chocolate chips and chopped chocolate. Using 1/2 Tbsp measuring spoon, scoop out the dough onto a parchment lined baking sheet. The cookies spread a lot while they bake so I don’t recommend using a larger scoop…unless you want huge cookies! 350°f for 10 min. Cookies will continue to cook once they are out of the oven so don’t bake for longer than 10 minutes.

The flour I’m using in this video is the grain free flour from @fullnfree but you can definitely use regular almond flour as well using the directions in the recipe

To all my “out of town” friends, I see you! People who live in NY and NJ sometimes forget that there is Jewish life outside of the tri-state area 🤣🤣🤣 I don’t ever take it for granted that I can walk into a handful of fully kosher grocery stores just in my neighborhood and get everything there!

The Jerusalem Capitals won!!! @theiehl game was at @ubsarena, the home of @nyislanders, and it was so cool to see two Israel hockey teams play to an arena with thousands of people who love and support Israel 🇮🇱🇮🇱🇮🇱 I had access to the VIP lounge and yes, it was all kosher and the sushi was pretty good 😘

Do you host for Pesach and do all the shopping? Do you go away to family or a program?

For all my “out of towners”, I want you to know that I love you and I grew up without anything like this so I promise I’m not showing it off 😘😘 I don’t ever take this for granted. I have a lot of NY friends who grew up with this and don’t understand what it’s like to live without it but to them, I always say we manage, we figure it out, and we have a beautiful holiday no matter how much or how little we have available at our fingertips.
