I’m excited to announce this last-minute giveaway of Aviva Kanoff’s first self-published cookbook, The No-Potato Passover! Yes, Passover is just a few days away and Aviva’s cookbook is filled with simple and delicious recipes that you’ll want to cook year round. My favorites are the beets on page 17, Aviva herself  jumping for joy in Sedona, Arizona on page 88 and the native carrying bananas (or are those plantains?) on her head on page 147. You can actually leave this cookbook on your coffee table for people to enjoy! How great is that?!?
Here is one of the incredible recipes I will be making for Passover this year from The No-Potato Passover. My guests are going to be so impressed!
Coq au Vin with Saffron Quinoa
Ingredients:
1 cup dry quinoa
1/2 cup dry white wine
1/2 cup water
pinch of saffron
1/2 cup mushrooms, thinly sliced
4 chicken leg quarters
3 Tbsp olive oil
salt and pepper
paprika
Directions:
1. Preheat oven to 400 degrees F.
2. Pour quinoa into a 9×13 inch pan.
3. Season with salt, pepper and saffron.
4. Pour water on top of quinoa and stir.
5. Sprinkle mushrooms on top of quinoa.
6. Rub chicken with paprika, salt, pepper and olive oil, place over quinoa in pan.
7. Pour wine on top of chicken.
8. Cover and bake for 1 hour, then uncover and bake for an additional 15 minutes (or until chicken is cooked through).
